What is sorbet?

Sorbet is one of the most classic dessert in Italy, consumed after lunch to help with digestion and to refresh mouth and palate.

It is a cold dessert, prepared with sugar, water and fruit.  The most known flavour is lemon, but there are numerous vaiants such as orange, melon and strawberry.

There are people who like to add a bit of alcohol, as vodka or any kind of liquor.

It can be consumed with a small spoon or drunk as if it was a cold drink.

The tradition of sorbet it all comes from Italy, it is narrated that the emperor Nerone ordered the ice directly from the Apennines to be prepared.

After a while, this dessert was forgotten, only to make a comeback with the Arabs in the ninth century in Sicily.

In the 16th century, two Florentines quarrelled over the paternity of the recipe, but it was in the following century that a Sicilian Francesco Procopio dei Coltelli started the real business of sorbets, importing them into Italy and abroad.

 

The difference from Ice cream

Even though both dessert are fresh and made with fruit, sorbet is way different because it contains water and not milk. Moreover, its texture it’s not as creamy as the one of ice cream, but grainy and semi-dense.

In the past sorbet was served to clean mouth and palate, but now is served after lunch to aid digestion.
